Vegan Fruitcake with Rum Soaked Apricots and Berries: A New Tradition

FruitcakeAh yes, fruitcake–that disgusting loaf speckled with nuts and bits of red and green jellies. Yet no matter how much people hate the traditional dessert, it keeps resurfacing EVERY YEAR because it is just that: a tradition. Well, bakers, I’m gonna do a little revamp on the good old classic. Not only are we going the vegan route but we’re also tossing out those jellies and replacing them with rum soaked fruit. That’s right: RUM! So go ahead…pour a glass of rum (for yourself and the cake) and create a new classic.

Tea Anyone? Butternut Squash & Maple Tea Cake

Butternut SquashFor me, the arrival of fall is officially marked with the debut of the red coffee cups (you know which ones I’m talking about), earth tone scarves, crunchy leaves, and one of my favorite types of gourd….butternut squash! Like its cousin, the pumpkin, this yellow fellow is loaded with antioxidants and fiber! The flavor palette is a little milder in sweetness when eaten raw but bursts with natural sugars and spices when roasted down.
